what next? (part 3 – back to basics)

As I’m searching for new challenges to take on with this blog, I’ve decided to hit the books.  My (second) newest cookbook is Ina Garten’s Back to Basics so I’ve decided to pull four recipes from the book and ask you all to select the next option from one of these choices.

1) A soup – Italian Wedding Soup – chicken meatballs, spinach, pasta and veggies in a chicken stock

2) A lunch – Tomato & Goat Cheese Tarts – puff pastry (not homemade) with sauteed onions, herb goat cheese, basil, tomato, thyme and parmesan

3) A dinner – Spring Green Risotto – risotto with asparagus, leeks, fennel, peas, lemon zest and juice, mascarpone cheese and chives

4) A dessert – French Apple Tart – homemade pastry with thinly sliced granny smith apples

So there is a huge range of options here so it will depend on what mood you are in on each particular day you vote (yes you can come back and vote for something each day!).  There are several other things I’m tossing around – so far requests have included pie crust, eggs Benedict, blueberry muffins, souffle and more…so before I select one of those options, I will throw this out for a vote.  And how are we feeling about adding in some “healthier” options because so far things have almost always involved heavy cream and/or cheese?  I’m also thinking about having an “open-ended” poll coming up where you will all just have to give me ideas or recipes of what you have in mind.  Just wanted to give you an idea of what I’m thinking of!  Let me know what you think I should be making next!
