Goat cheese and basil stuffed chicken.

Sounds fancy, looks fancy, tastes awesome.  The best part is that it is a quick tip!  This incredibly easy dish is always juicy and flavorful.  All you need is bone-in, skin-on chicken breasts (1 per person), any type of goat cheese and basil.  That and some olive oil, salt and pepper and you are good.  Preheat the oven to 375F.  Take your chicken and slide your hand in between the skin and the meat.  Slide a few basil leaves and about 2 oz of goat cheese under the skin. Usually I press the goat cheese down so that it is spread under the skin evenly.  Generously coat the chicken breasts in olive oil, salt and pepper.  Bake them for 35-40 minutes, until cooked (I usually put it in a foil-lined pan).

You can use a variety of herbs and goat cheeses and it’s always delicious.  ENJOY!

How come it matters if it is bone-in or not? Can you do it without?

You can definitely use boneless. If you can find boneless with the skin, that makes it easier to hold the goat cheese. I’ve done boneless, skinless chicken breasts as well and just pressed the goat cheese onto the top. The bone adds more flavor (that applies to any meat really) and helps keep the chicken juicier in my opinion.
