For a great “fall” side dish, try maple roasted squash with craisins and walnuts for a twist on roasted squash.  Once you have pealed a butternut squash and cut it into large chunks, toss it with a little olive oil, salt and pepper.  Suggestion: roast the squash on a pan that has at least one layer of foil, if not more.  I went with a layer of heavy-duty foil and a silpat in order to protect the pan.  Burnt on maple syrup is a pain to try to clean!  After roasting the squash for about 15 min, pull it out and add a few tablespoons of maple syrup (ideally it should be the real stuff!).  Toss the squash around until all the pieces have been coated, add more syrup as needed.  Roast for an additional 10 minutes at a time until tender.  When the squash is almost ready (with maybe 5-10 minutes left), add some craisins and walnuts to the mix and toss again.  Finish roasting and serve warm.  This is a really delicious side for pork and would also be great on Thanksgiving!
